Happy Shepherd Farm’s choicest cut of USDA/Maine inspected, pasture-raised lamb, our rack-of-lamb is the pride and joy of our farm and a true crowd-pleaser. Sure, rack of lamb is a tad pricey. But it makes for a memorable meal and is always a winner for that holiday dinner or special occasion garden party or bbq. So easy to prepare, these rib racks and rib chops are amenable to a wide array of seasonings- from just salt and pepper to rubs that include garlic, rosemary, cumin, sage, thyme, oregano, or your favorite beefsteak spices. Prepare the rack as-is or separate out the ribs for mini rib steaks. On the bbq or in the kitchen skillet, cook to 130 deg.f. and then let the meat rest, loosely covered with foil, for five to ten minutes. Can also be oven roasted at 350 deg.f. or broiled.
